A strong dark wheat ale using domestic extracts, specialty grains, hops with a traditional bavarian yeast strain.

Water: | I used Puritan Spring water because it's delivered to my home. Any water free of chlorine is fine. | |||||||
Grain: | 8 oz. American crystal 40L 8 oz. Dextrine malt (Cara-Pils) |

Steep: | 30 minutes at 155-160° F in nylon boiling bag. Remove from heat and steep addl' 10 min. Discard grains and rinse bag for hop boiling. | |||||||
Boil: | 60 minutes | SG 1.143 | 2.5 gallons | |||||

Add 1 oz. hops to nylon boiling bag for 60 min. Add 1 oz. hops during last 1-2 minutes. | ||||||||
Hops: | 1 oz. Tettnanger (4.5% AA, 60 min.) 1 oz. Tettnanger (4.5% AA, 2 min.) |

Yeast: | White Labs Bavarian Wheat. Starter of 1 cup light DME and 16 oz. of water. Pitched after 24 hours. | |||||||
Log: | Fermentation at 72-74° for 5-7 days in primary 6.5 gal carboy. Transfer to secondary 5 gal carboy leaving sediment behind. Bottled 16 days later (14 days okay or after 3 days of stable hydrometer readings) using 5 oz. corn sugar for priming. Yield: 49 twelve oz. bottles. |
