Vanilla Cream

Beer: Vanilla Cream Style: Cream Ale
Type: Extract w/grain Size: 5 gallons
Color:
9 HCU (~7 SRM)
Bitterness: 28 IBU
OG: 1.055 FG: 1.007
Alcohol: 6.2% v/v (4.9% w/w)
Water: Add a teaspoon or so of gypsum if you like.
Grain: 0.25 lb. American Crystal 10L
0.5 lb. Dextrine Malt (Cara-Pils)
Steep: Steep grains for the typical 45 minutes @ 155° F.
Boil: 60 minutes SG 1.055 5 gallons
6 lb. Light LME
1 lb. Light DME
Add 1 teaspoon of flaked Irish Moss the last 15 minutes of the boil.
Hops: 1 oz. Fuggles (4.75% AA, 60 min.)
1 oz. Cascade (6% AA, 15 min.)
Yeast: Wyeast #1056 American Ale
Log: Add 4 oz of lactose in 2 cups of boiled water to the secondary.
Add 3 oz of Vanilla at bottling.
Carbonation: Carbonate using corn sugar or force carbonate in a keg.
