Wild Rice Lager

Check the bulk stores for broken wild rice, it's a lot cheaper than the high-grade stuff. Traditionally parched is, of course, much better than the machine-processed rice.

OG: 1.041 FG: 1.010
Alcohol: 4.0% v/v (3.1% w/w)
Water: Adjust with phosphoric acid.
Grain: 5 lb. 4 oz. American 2-row
4 oz. American crystal 60L
8 oz. Dextrine malt (Cara-Pils)
2 lb. Wild rice
Mash: 82% efficiency
Cook wild rice as usual with 1 volume rice to 4 volumes water (about 45 minutes), no cereal mash necessary. Combine for brief protein rest about 133F for 10 minutes, then boost to 153F for overnight rest.
"20 min." hops are actually FWH.
Boil: 60 minutes SG 1.060 17 liters
1 lb. Light malt extract
1.25 g Irish Moss, rehydrated.
Hops: 27g Northern Brewer (6.8% AA, 45 min.)
25g Hersbrucker (3.5% AA, 20 min.)
15g Hersbrucker (aroma)
Yeast: Wyeast 2278
Log: Ferment, lager and bottle age at 45-50 F.
Carbonation: Bottle prime and age with 1 cup dextrose to approx. 21 L final volume.
