Valentines Ale

Used 2lbs Canadian Honey Malt. This site doesn't offer it as a choice, so I said Crystal 40L.

Bitterness: 14 IBU

Grain: 2 lb. American crystal 40L
8 oz. British chocolate
Steep: Single mash of combined crushed grains at 158F for 60 minutes. Sparged with 1 Gallon at 170F.
Boil: 60 minutes SG 1.095 12 liters
6 lb. Amber malt extract
1 lb. Brown sugar
12oz lactose added after 45 minutes.
2 tsp irish moss added after 50 minutes
Hops: .5 oz. Fuggles (4.75% AA, 60 min.)
.5 oz. Willamette (5% AA, 30 min.)
1 oz. Kent Goldings (5% AA, 15 min.)
Yeast: Wyeast 1968
Log: Brew started Feb 14, 2005. Racked to 2nd on Feb 19. Bottled March 2. Average ferment ambient temp 65F.
Carbonation: Dissolved 2/3cup white sugar in 1L hot water and added to bottling bucket.
Tasting: This is going to be addictive! I just had to drink every last drop of what was left in the carboy after bottling, and was tempted to open a capped bottle immediately! It will be ready to drink as soon as carbonation has taken place. Very dark red/brown color. Chocolatey malty, great hop aroma, a weee bit of sweetness to balance the bitter. Good lingering aftertaste. Makes you want to drink more and more!
