Water: Used 5.2 Mash Stabilizer to maintain proper Ph.
Grain: 11 lb. 4 oz. American 2-row
12 oz. American crystal 120L
1 lb. American chocolate
2 lb. Roasted barley
Mash: 65% efficiency
Mashed grains out with .75qt/1 lb water to grain ratio,at 156° for 90 minutes. Sparged at 1.25qts/1 lb water to grains ratio with 170° for 30 minutes. For a boiling volume of 6.75 gallons.
Boil: 60 minutes SG 1.053 6.5 gallons
Brought wort to boil, added first hop addition. 30 Minutes into boil, added second hop addition. 45 minutes into boil added Irish moss and wort chiller. Used no aroma hops.
Hops: 1 oz. Bullion (8.5% AA, 60 min.)
1 oz. Kent Goldings (5% AA, 30 min.)
Yeast: White Labs 023 Burton Ale.
