Late harvest clone
This is my base that I tried for a my attempt of a clone of the Late Harvest Ale by RedHook.
I definately have some tweaking to go with, but it doesn't taste that bad either.

Mashed grain in 2 seperate pots 1 with 1 gallon water, the other with about 1/2 gallon. mainly because I need to get some bigger pots. 8-) steep grain @150° for 45 minutes. dropped down to about 100° for an additional 20 minutes. blended the grain together into the big pot, then brought everything to a nice rolling boil. set the timer began adding the hops. |

Yeast: | Yeast used was the #WLP001 California Ale (2 packets) | |||||||
Log: | Racked 3 times. final racking produced about 4.8 gallons of heaven. Racked 1st time after 4 days. Racked 2nd time after 2 additional days. Racked final time to Filling bucket after the bubbles slowed to 1 every 1 1/2 minutes between. (about 4 more days). Bottled into 16 oz bottles. added 1 coopers carb drop per bottle. capped and let sit an additional 10 days. tried 1st after 3 days, tried 2nd at about 8 days, but at about 10 - 12 days was about perfect. (neighbor loved it anyways). |

Tasting: | would probably add a bit of NB hops in the primary. I'm impatient so mine always end up a bit faster, but I am sure a slowed process would greatly improve the taste. I will try another batch probably messing with the hops qty's again, but not sure exactly what I will change / try. but it is a good start. |
