Brown Trout Ale

This is a cross between a Brown and an Amber Ale.

Beer: Brown Trout Ale Style: American Brown
Type: Extract w/grain Size: 5 gallons
Color:
51 HCU (~22 SRM)
Bitterness: 18 IBU
OG: 1.052 FG: 1.012
Alcohol: 5.1% v/v (4.0% w/w)
Water: Well water - clean flavor and relatively hard
Grain: 8 oz. American Munich
8 oz. Belgian biscuit
8 oz. Belgian Special B
4 oz. American chocolate
Steep: Boil 1 1/2 gal water in your brewpot. In a separate, smaller pot steep grains in 3 qts water at 150-deg for 40 minutes (not in a bag). Strain the water into the brewpot. Rinse the grains with an additional 3 qts 150-deg water into the brewpot. Then bring the brewpot (now 3 gals) to boil and add 2 cans Light Malt Extract.
Boil: 60 minutes SG 1.086 3 gallons
6 lb. 6 oz. Light malt extract
Add irish moss at 15 min.
Hops: 1 oz. Willamette (4.5% AA, 60 min.)
1 oz. Fuggles (4.5% AA, 15 min.)
Yeast: White Labs California Ale
Log: Cooled wort by placing brewpot into sink full of cold water. Changed water a few times. Also added a small block of ice (Cool Whip container) and stirred to help cool. I didn't use a yeast starter - just pitched at about 75-80 deg. Kept in 68-deg basement.
Carbonation: 5 oz priming sugar
Tasting: My fermentation started slowly - took almost two days. Then it took off and remained steady for 5 more days. Then racked to secondary for another 7 days. Bottle and let sit for 2-3 months for best results. AWESOME beer!
