An excellent American Amber with great malt complexity and very balanced

Alcohol: 5.4% v/v (4.3% w/w)
Grain: 8 lb. 8 oz. American 2-row
8 oz. American Munich
8 oz. American victory
1 lb. American crystal 60L
2 oz. American chocolate
Mash: 70% efficiency
Batch sparge 4.2 gal @ 153° for 60 min. Drain quickly & mix in 3 more gallons. Wait 10 min. and drain.
Boil: 60 minutes SG 1.045 6 gallons
IM at 15 min.
Hops: .5 oz. Magnum (13% AA, 60 min.)
.5 oz. Cascade (6% AA, 10 min.)
.5 oz. Centennial (10.5% AA, 10 min.)
.5 oz. Cascade (aroma)
.5 oz. Centennial (aroma)
Yeast: US56 yeast cake from cream ale
Log: Violent fermentation using entire primary yeast cake from previous batch. Primary complete in 2 days. Temp 72-75. After 2 days able to reduce temp to 65 til day 7. Racked to secondary for 2 days at 65, then in fridge to crash cool for 2 days prior to kegging.
Carbonation: Force carb. Medium carbonation good for style.
Tasting: Nice toasty flavors from Victory and Munich malt mix nicely with the caramel to give more complexity. Slight citrus hop aroma and flavor. Balanced between malt and hops. May kick up a hop notch on flavor and aroma additions next time but an outstanding beer as is.
