Yeast: | Believe it or not, I used a dry ale yeast by Safale (S05), and was extremely happy with the result. In fact I will use this yeast over the 1056 yeast for this specific beer any day. | |||||||
Tasting: | I noticed another Sweetwater clone here, but Sweetwater actually uses Simcoe hops in their IPA. I added the Crystal for the aroma as well as a little more Munich, but overall the maltiness is right on. You could easily go with a full ounce of Simcoe on this recipe without killing it. |
