Bitterness: 13 IBU
OG: 1.060 FG: 1.012
Alcohol: 6.2% v/v (4.9% w/w)
Water: All water will be RO
Grain: 11 lb. Belgian pale 2 row
21 lb. German Wheat malt
2 lb. Rice hulls
Mash: 60% efficiency
Triple decoction mash w/ rests @ 122, 153 & 168.
No sparge method w/ boiler OG around 1.070 then add RO to
bring to 1.035-1.040 range. Boil until 1.045-1.050.
Boil: 75 minutes SG 1.060 12 gallons
Add 1 tsp.Irish moss last 15 min of boil.
Hops: 2 oz. German Hallertauer (3.7% AA, 60 min.)
1 oz. German Hallertauer (3.7% AA, 30 min.)
Yeast: 1/2 gal starter of White Labs #WLP300 Hefeweizen yeast.
Log: Primary in glass @ 70F until done.
Secondary/ condition in stainless @50F until 5/22/99
(sons wedding).
Carbonation: Force carbonate in corney keg.
