Bitterness: 11 IBU
OG: 1.073 FG: 1.016
Alcohol: 7.3% v/v (5.7% w/w)
Water: Salem Va. tap water.
Grain: 1 lb. American crystal 60L
.25 lb. American chocolate
.25 lb. Roasted barley
Steep: Steep grains at 155° for 45 min.
Boil: 60 minutes SG 1.145 2.5 gallons
3 lb. Light malt extract
6 lb. Amber malt extract
.25 lb. Brown sugar
Add 1 tsp. Irish Moss with 15 min. left in boil.
Hops: 1 oz. Fuggles (4.75% AA, 60 min.)
.5 oz. Kent Goldings (5% AA, 30 min.)
.5 oz. Kent Goldings (5% AA, 10 min.)
Yeast: WLP028 Edinburgh Ale
Log: Ferment for 5 to 7 days and bottle for 4 weeks
Carbonation: Muntons Kreamyx Priming Sugar
