96g American chocolate
Steep: Steep for 20 minutes at 155°F
Boil: 30 minutes SG 1.119 2 gallons
1.39kg Amber malt extract
765g Dark malt extract
600g Honey
Add extract when temperature reaches 185°F and sustain a rolling boil for 2-3 minutes. Add honey at last 15 minutes.
Hops: 30.3g Hallertauer Hersbrucker (4.25% AA, 60 min.)
16g Amarillo (8.2% AA, 15 min.)
Yeast: Munton Dry
Log: Brewed 11/09/08: Total brew time: 2 hours 5 minutes
Primary 7 days @ 68°.
Secondary 7 days @ 68°. At secondary add spices to secondary (1 stick cinnamon, 1/8 tsp ground clove, 1/4 tsp nutmeg, 1 split vanilla bean).
Carbonation: Granular sugar in bottles
