Tasting: | I like everything about this beer except the esters from the English style yeast. They just are too much and mask the spices - don't think a cooler primary temp would have mattered. Will go back to 1056 next time for a cleaner yeast profile and let the spices shine through. Still trying to get a bigger malt kick similar to Great Lakes - will have to up the melanoidan/aromatic some more as not there yet. |
