Steep: | 30 minutes at 155 - lightly squeezed out and brought to boil. | |||||||

Hops: | 1 oz. Cascade (6% AA, 60 min.) 1 oz. Centennial (10.5% AA, 15 min.) |

Yeast: | Wyest 1056 (American Ale) - Activator | |||||||
Log: | Fermentation temp at 65 for 6 days in primary - 3 weeks in secondary. A little extra time in the secondary cleans it out. Ferment at lower temps to "crisp up" the beer. Primed with 3/4 corn starch in bottle bucket and racked to bottles - three more weeks minimum. |

Tasting: | Really clean and crisp ale - sorta like a steam bear crossed with a ESB. Favorite of most guests. |
