Acid Tripel

My first Belgian IPA. I'd call it a mix of a Belgian Tripel and a high alpha acid IPA. (Hence the name)

Type: All grain Size: 5.25 gallons
Color:
20 HCU (~12 SRM)
Bitterness: 63 IBU
OG: 1.083 FG: 1.012
Alcohol: 9.2% v/v (7.2% w/w)
Water: 1 tbs 5.2 for mash.
Grain: 11 lb. German Pilsner
2 lb. German Vienna
Mash: 70% efficiency
1.3 qt per pound. 148F mash for 2 hours. Continuous sparge with 180F water to attain 7 gallons.
Boil: 60 minutes SG 1.062 7.0 gallons
2 lb. Belgian candi sugar (dark amber)
1 tsp Irish Moss last 15 minutes
Hops: 1 oz. Cluster (5.7% AA, 60 min.)
1 oz. Kent Goldings (4.8% AA, 60 min.)
1 oz. Mt. Hood (5.2% AA, 60 min.)
1 oz. Kent Goldings (4.8% AA, 30 min.)
.5 oz. Kent Goldings (aroma)
Yeast: Wyeast 3864
