Grain: 41g American black patent
434g American 2-row
224g American chocolate
Steep: Add 200 grams of Brazilian (Pilao) or equivalent Coffee used as part of steep.
Also used 2 tsp of vanilla extract.
Steep grains for 30 minutes at 155° F
Boil: 30 minutes SG 1.058 8 gallons
3.18kg 113g Dark malt extract
0.91kg 170g Light malt extract
0.91kg Brown sugar
Add extract when boil reaches 195° F, after extract is added get rolling boil for 2-3 minutes before adding hops.
Hops: 32.1g Kent Goldings (5% AA, 45 min.)
30.0g Kent Goldings (5% AA, 30 min.)
Yeast: Yeast: Safbrew T-58 (Saccharomyces cerevisiae)
Properties:
A specialty yeast selected for its estery somewhat peppery and spicy flavor development. Sedimentation: medium. Final gravity: high.

Also recommended for bottle-conditioning of beers. Excellent performance in beers with alcohol contents of up to 8.5% a/v but can ferment up to 11.5% a/v.
