Lump of Coal

Guinness Clone brewed for my 2010 Xmas Party.

Beer: Lump of Coal Style: Irish Dry Stout
Type: All grain Size: 5.5 gallons
Color:
117 HCU (~39 SRM)
Bitterness: 41 IBU
OG: 1.048 FG: 1.012
Alcohol: 4.7% v/v (3.7% w/w)
Water: Tapwater with 1 TBS Gypsum, 1 TBS 5.2 Stabilizer.
Grain: 7 lb. British pale
6 oz. Dextrine malt (Cara-Pils)
1 lb. 4 oz. Roasted barley
10 oz. Flaked barley
Mash: 80% efficiency
Mash at 153F for 1 hour. Pull 1 gallon decoction and add to 1 gallon boiling water. When decoction boils, reintroduce to mash. Continuous sparge with 170F water to collect 6.5 gallons in brewpot.
Boil: 60 minutes SG 1.041 6.5 gallons
1 week prior to brewing, leave 2 pints Guinness out in a loosely covered bowl to sour, then freeze. While boiling, heat the soured stout to 180F for 20 minutes to pasteurize. Then add the soured stout to the brewpot at flameout.
Hops: .5 oz. Kent Goldings (5% AA, 60 min.)
1 oz. Northern Brewer (8.5% AA, 60 min.)
Yeast: White Labs 004 in a 1 qt starter.
Carbonation: Keg and serve on 70% Nitrogen 30% CO2 blend.
Tasting: Brilliant!
