Yeast: T-58. First time using.
Log: Brewed today, new years day 2011. Began around 6am and concluded around 12pm
Carbonation: 4oz sugar.
Tasting: This could take a while to reach maturity, kinda like me. The wort apeared darker than expected but I did collect 5.25 gallons and did hit my expected OG on the nose. There was some wort left over in the brew kettle with the whole hops at racking time so I bet my efficency was over the anticipated 75%, more like 77-78. The wort was 68F at time of yeast pitching. Glyben glyben (that's for you hun).
