Old Saggy Ass

Meant to be a clone of North Coast Old Stock ale. My efficiency was terrible, so I had to add extra DME (3 of the 6 pounds listed). Still damned good, though.

Type: All grain Size: 4.5 gallons
Color:
15 HCU (~9 SRM)
Bitterness: 34 IBU
OG: 1.112 FG: 1.021
Alcohol: 11.7% v/v (9.2% w/w)
Water: Water's water. From my tap to the kettle
Grain: 13.25 lb. British pale (Maris Otter)
2 lb. British mild
1.5 lb. Dextrine malt (Cara-Pils)
Mash: 37% efficiency
Single infusion at 152°F for 2 hours.
Boil: 120 minutes SG 1.081 6.2 gallons
6 lb. Extra Light dry malt extract
20 minute hop addition is really a bitterness calc for First Wort Hops.
Pulled 1 gallon of first runnings and boiled separately down to 1/2 gallon. Then added back to the main boil.
Hops: 1 oz. Fuggles (4.75% AA, 60 min.)
1.5 oz. Fuggles (4.75% AA, 20 min.)
1.5 oz. Fuggles (4.75% AA, 5 min.)
Yeast: 1 gallon starter of Wyeast 1084 (Irish Ale) and 1728 (Scotch Ale)
Log: Brewed 12/24/06.
Transferred to Secondary 1/23/07
Bottled on 2/27/07.
Carbonation: 1.9 volumes Corn Sugar: 2.51 oz. for 4.5 gallons @ 68°F
3/4 cup corn sugar
Tasting: Incredibly tasty at bottling time. I can't wait to revisit this in 6 months to 1 year.
