Grain: 8 lb. German Pilsner
1 lb. Wheat malt
1 lb. German Vienna
6 oz. American crystal 10L
8 oz. Belgian CaraMunich
1 lb. Belgian CaraVienne
Mash: 66% efficiency
Step infusion with a protein rest at 120 degrees for 15 minutes and Saccharification Rest for 60 minutes at 150 degrees
Boil: 60 minutes SG 1.045 6.5 gallons
Irish moss at 10 minutes
Hops: 1 oz. Hallertauer Mittelfruh (3.2% AA, 60 min.)
1.5 oz. Hallertauer Mittelfruh (3.2% AA, 20 min.)
1.5 oz. Saaz (2% AA, 20 min.)
0.5 oz. Hallertauer Mittelfruh (3.2% AA, 5 min.)
0.5 oz. Saaz (2% AA, 5 min.)
Yeast: WLP029 German Ale/Kolsch Yeast
