Midwinter Pilsner
This Pilsner uses 15% raw barley in the mash to approximate the less modified Bohemian
Pilsner malt - and to allow a double decoction. This is my second attempt at this method.

-- Mash in with 2L/kg for 60min glut. rest (40-44ºC). -- Infuse with additional 1L/kg 95ºC water for prot. rest. -- Rest at 50-53ºC for 15min. -- Take 40% thick decoction, rest for 10min at 70-72ºC. -- Bring decoction to boil and boil for 15min. -- Return decoction and rest at 66ºC for 30min. -- Take second thick decoction of 30-35%, boil 15min. -- Return decoction and rest mash at 72ºC for 20min. -- Sparge immediately with 77ºC water. |
