Son of the Golden Boy Pilsner

This is perhaps our only beer that really hits style dead on. Its a
good one!

Type: All grain Size: 6 gallons
Color:
7 HCU (~6 SRM)
Bitterness: 44 IBU
OG: 1.055 FG: 1.012
Alcohol: 5.5% v/v (4.3% w/w)
Grain: 10 lb. Klages Pale Ale Malt
.20 lb. Munich Malt
.25 lb. Belgian Amber Malt
Mash: 85% efficiency
Mash for 90 minutes, single infusion. Add 1.1 qts/lb of 170 F water
to strike at 152F. Over mash, dropped to 150F.
Boil: 90 minutes SG 1.041 8 gallons
Moss @ 15 minutes to go in boil.
Hops: 1.5 oz. Northern Brewer (7.9% AA, 60 min.)
.5 oz. Saaz (2.5% AA, 30 min.)
2.5 oz. Saaz (aroma)
Yeast: Bohemian Pilsner WYeast with starter
Log: Ferment at 50F for primary (10 days) then lager for at least 1 month @ 30-35F.
Tasting: This beer came out quite well. It is the brightest beer we've ever had and has a
fab-u-lous head as well as a smooth refined lager taste. We've made this
exact recipe various times and the final perceived bitterness varies
somewhat. Odd.
