Yeast: | Wyeast 2278--Czech Pils | |||||||
Log: | Brewed on Feb 17. Pitched yeast at 69°. Next day, moved fermenter to 49° room. Feb 23--raised to 65° for diacetyl rest. Feb 24--racked to secondary. Resume fermentation at 49°. Feb 25--dry hopped with 1/2 oz Saaz. March 3--moved fermenter to 33° refrigerator. March 28--primed with scant cup corn sugar and bottled. Warm conditioned at 65° for 10 days. April 3--moved back to 49° to finish carbonating April 15--fully carbonated. Nice smooth taste with good hop aroma. Great foamy head. Moved to refrigerator for further lagering. May 2--extremely fine tasting Pils. Similar to Pilsner Urquel. |

Tasting: | Might use part Laaglander's DME in order to raise final gravity a bit. Slightly light bodied for the style. The next Pils we brew will probably be an all-grain version of this recipe. |
