Doughed in at 115 degrees for 30 min. acid rest at 108 degrees, Decoction to raise to 122 degrees for a 30 min. protein rest. Second decoction to raise to 149 degrees sacrification rest for 1 hour, Wort ended at 1.090 @ 9 gal.after sparging w/ 2 gal.of 168 degree RO water. Added 5 gal. of RO to drop to 1.050 in boiler. Origional gravity 1.060 @ 11 gal. |
