mash grain in 12 qt. water 122 deg. for 30 min; add 8 qt. 170 deg. and enough bottom heat to get to 150 deg hold 1 hr, raise to 158 hold 1 hr, mash out at 170 for 10 min. sparge into brewpot w/ 4 gal water keeping grain bed at 140 (~180 deg water) | ||||||||
