Alcohol: 7.8% v/v (6.1% w/w)
Grain: 0.5 lb. American crystal 60L
Steep: Add grain in a bag to 3 gallons of cold water and heat to 170° F (77° C). Remove grain, bring to boil and add extract and honey.
Boil: 60 minutes SG 1.117 3 gallons
6.5 lb. Light malt extract
2.5 lb. Honey
1 tsp Irish Moss at T -15 minutes.
Hops: 1 oz. Northern Brewer (10.2% AA, 25 min.)
1 oz. Cluster (8.1% AA, 15 min.)
1 oz. Mt. Hood (5.4% AA, 10 min.)
Yeast: WLP 810, started with 1/2 cup extra light DME and 1/4 tsp yeast nutrient in 1 L of water, liquid decanted before pitching.
Carbonation: 2.7 volumes Corn Sugar: 4.69 oz. for 4.75 gallons @ 68°F
