Yeast: | S-23 Saflager. Washed from previous Pilsner batch, as a test. Kicked off in 3 hours! |

Log: | Brew 4/20/08 58% mash efficiency due to low enzymes, maybe add Pils to increase this. Late add of extract and brown sugar, last 15 min, gives IBU = +30 Bottle 5/4/08 |

Used 8 Tbls corn sugar. Still low after 3 weeks. |

Tasting: | Tasted 5/29/08 - Very good! Pours 1/4" tan head, but no retention, nice flavor, very clean. Next try I will add more Munich, a little Pils, and a wee bit of Roast. Very good at 3 weeks, will only get better!! |
