Grain: 5.5 lb. German Pilsner
6. lb. German Munich
2 oz. Belgian aromatic
2 oz. Belgian biscuit
4 oz. Belgian CaraMunich
Mash: 83% efficiency
This recipe is a step mash. The first step is 122 F for 25 minutes, followed by 152 F for 90 minutes.
After the second step, bring mash to 168 F and hold for 10 minute mash out.
Continuous fly sparge to collect 8.25 gallons to the boil pot.
Boil: 60 minutes SG 1.045 8.25 gallons
Hops: .75 oz. Hallertauer Hersbrucker (5% AA, 60 min.)
.75 oz. Tettnanger (4.5% AA, 60 min.)
Yeast: Wyeast Oktoberfest 2 step starter, 800 ml, decant, then 2L starter.
Log: Primary at 52F for 7-10 days, ramp up to 68 F for 3 diacetyl rest, then cold crash,keg, and lager for 30 days.
