Heat 5 quarts strike water to 137°F. Add grains temp should stabilize at 122°. Hold temp for 20 minutes. Add 2.8 quarts boiling water to raise temp to 150°F. Hold 150° for 60 minutes stirring every 5 minutes. Raise temp to 168°F and sparge with 2.6 gallons of 170° water. Tranfer to boiling kettle and heat to boil. |

Add hops during boil according to hopping schedule. Add 3 lbs of Dry Wheat Extract. |

Yeast: | Used Activator pack of Wyeast 3068 Weihenstephan Weizen Yeast. No starter used. |

Log: | Pitched yeast at 75°F. Primary fermentation at 68° for 1 week. Signs of fermentation started within 12 hours. Racked to secondary for 1 week and bottled. |

Carbonation: | Used 5 oz of corn sugar for carbonation. | |||||||
Tasting: | Beer tasted excellent when racked to secondary. Tasted better at bottling. Beer turned out really good ture hefe taste. Would not change anything for next batch. |
