Bitterness: 16 IBU
OG: 1.050 FG: 1.010
Alcohol: 5.1% v/v (4.0% w/w)
Water: Charcoal-filtered and boiled water, then treated with gypsum to achieve a 5.2 pH in the mash (@ 150° F).
Grain: 4 lb. 12 oz. Belgian Pilsner
5 lb. Wheat malt
8 oz. Rice Hulls
Mash: 75% efficiency
Boil: 90 minutes SG 1.046 6 gallons
Irish moss, 15 min. from end of boil.
Hops: 2 oz. Hallertauer Hersbrucker (2.4% AA, 60 min.)
Yeast: Wyeast #3068 Weihenstephan Weizen
Log: Ferment at 62° F until complete, then bottle.
Carbonation: Prime with Wyeast #2206 Bavarian Lager + 1¾ cups of wheat DME, then bottle in 16oz European-style bottles.
