This is a combination of a recipe suggested by David Cryer for a Schlenkerla clone, and a recipe on the Weyermann website (www.weyermannmalt.com) for a "1903 Weyermann Schlotfegerla".

Mash-in with 14.3 litres of water at 60°C Rest for 20mins at 60°C Raise mash to 64°C Rest for 20mins at 64°C Raise mash to 72°C Rest for 30mins at 72°C Iodine test as normal Raise mash to 78°C for mash-out. Allow 60 minutes for first wort run-off of about 12 litres. 3 sparges of 4.5 litres each, for 95 minutes total. |
