Grain: 1 lb. American crystal 20L
4 oz. Belgian Special B
4 oz. American chocolate
Steep: steep grains for 30 minutes at 150 degrees then add extract and boil 60 minutes
Boil: 60 minutes SG 1.105 3 gallons
8 lb. Amber malt extract
add 1/4 teaspoon irish moss with 15 minutes left of boil
Hops: 1 oz. Willamette (5% AA, 60 min.)
.5 oz. Cluster (7% AA, 15 min.)
.5 oz. Cascade (aroma)
Yeast: pitch wyeast 1056 at 70 degrees
Log: force carbonate with 28lbs co2 for 2 days
