Classic American Pils

This recipe is closely based on our friend Doug's CAP that we had at
the Southern CA Homebrew Festival. It was so damned good, I just had
to try my hands at it. So here's Paul's & my attempt.

Beer: Classic American Pils Style: American Pilsener
Type: All grain Size: 10 gallons
Color:
3 HCU (~3 SRM)
Bitterness: 26 IBU
OG: 1.050 FG: 1.015
Alcohol: 4.5% v/v (3.5% w/w)
Grain: 12 lb. American 6-row
3.21 lb. British Pilsner
1.50 lb. Flaked barley
Mash: 85% efficiency
SINGLE REST AT 155° FOR 90 MIN.
RAISE TO MASHOUT (168), STIR CONSTANTLY. RECIRCULATE UNTIL VERY CLEAR.
BE SURE TO AVOID A STUCK SPARGE, DO NOT OPEN THE OUTPUT FULL.
TAKE YOUR TIME. MAIZE IS FAMOUS FOR STICKING.
Boil: 60 minutes SG 1.045 11 gallons
Whirflock tabs at 15 minutes.
Hops: 1 oz. Northern Brewer (8.5% AA, 60 min.)
.75 oz. Northern Brewer (8.5% AA, 35 min.)
.37 oz. Tettnanger (4.5% AA, 10 min.)
.5 oz. Tettnanger (aroma)
Yeast: W.L. AMERICAN PILSNER OR GERMAN PILSNER. Big starters will be used.
Tasting: Haven't done it yet. I will update when I let this baby into the keg.
So just hold on and relax.
