FriPA the 13th

This is my first attempt at an IPA, so I tried to keep things as simple as possible while preserving the quality. I was planning on making a Bell's Two Hearted clone using only Centennial hops, but found some really fresh EKG and decided to use them for aroma instead. Should be ready to be tapped on 13 October 2006, hence the name.

Beer: FriPA the 13th Style: India Pale Ale
Type: Extract w/grain Size: 5.5 gallons
Color:
20 HCU (~12 SRM)
Bitterness: 57 IBU
OG: 1.072 FG: 1.015
Alcohol: 7.4% v/v (5.8% w/w)
Water: Use tap water filtered with a commercial activated-carbon system. If you have good tap water you can probably skip this step, but mine is terrible.
Grain: 1 lb. American Munich
1 lb. American crystal 40L
Steep: Steep grains in water at 150°F for 30 minutes, then sparge with 170°F water.
Boil: 60 minutes SG 1.099 4 gallons
10 lb. Light malt extract
Add liquid malt extract, fill to 4 gallons, and boil for 60 minutes.
Hops: 2 oz. Centennial (7.4% AA, 60 min.)
1 oz. Centennial (7.4% AA, 45 min.)
.5 oz. Kent Goldings (6.2% AA, 30 min.)
.5 oz. Kent Goldings (6.2% AA, 15 min.)
1 oz. Kent Goldings (aroma)
Yeast: Wyeast 1098 British Ale, XL Smack Pack
Log: Brewed 15 September 2006
Primary: 7 days at ~70°F
Secondary: 13 days at ~70°F, dry hopped in secondary
Cold conditioned in keg: 8 days at 38°F
Carbonation: 2.4 volumes Keg: 10.2 psi @ 38°F
Tasting: Very tasty, but came out much darker and maltier than expected. Next time I'll cut the Munich to 4-8 oz and add the LME late in the boil. Hopefully this will improve the hop character as well, without requiring additional hops. I'll probably dry hop with 1.5-2 oz (all Centennial) next time.
