Log: | Reusing S-23 dry lager yeast. Second time using. Seemed to work well with Baltic style. Fermented at 50F for 2 weeks, secondary at 40F for 4 weeks, lagered at 38F for 6 weeks. | |||||||
Carbonation: | medium carbonation | |||||||
Tasting: | Big chocolate aroma and flavor. Only hints of dark fruits (which is more to style) of raisins coaxed out. No yeast derived esters (that S-23 supposed to produce) and no diacetyl. Nice dark brown color and tan head. Medium body and no alcohol hotness - smooth - though it does warm you up. Could actually pass as a Schwarzbier since the roast is not harsh in any way and it does not have the alcohol bite that you see in commercial brands (that I didn't want, so success!), Baltika seeming to be the smoothest. A nice sipper. Look forward to sampling a bottle in 6+ months to see how it ages. |
