German Pils

Desire a cross between a German Pils and Czech pils

Type: All grain Size: 6.2 gallons
Color:
3 HCU (~3 SRM)
Bitterness: 38 IBU
OG: 1.049 FG: 1.011
Alcohol: 4.9% v/v (3.9% w/w)
Water: All water charcoal filtered(low ions).
Add Lactic acid to sparge water to get pH=5.8
Grain: 10 lb. German Pilsner
5 oz. Wheat malt
5 oz. Flaked barley
Mash: 76% efficiency
Mash in to get 154 F then rest 20 minutes.
Decoct 2 gallons by raising to 160F for 20 minutes then boiling for 30 minutes.
Return Decction to mash to raise to 162F. Rest 20 minutes then return rest of decoction and sparge.
Boil: 90 minutes SG 1.044 7 gallons
Irish Moss at 20 minutes left in boil
Hops: 1 oz. Hallertauer Hersbrucker (4.5% AA, 60 min.)
1 oz. Saaz (3.5% AA, 30 min.)
.5 oz. Saaz(First Wort) (3.5% AA, 30 min.)
.5 oz. Hersbrucker(First Wort) (4.5% AA, 30 min.)
1.5 oz. Saaz (3.5% AA, 15 min.)
.5 oz. Saaz (aroma)
Yeast: Czech Pils Wyeast 2278 (3 qt starter)
Log: Brew 10/30/99. Fermenting at 50F.
Carbonation: 2.5 volumes Corn Sugar: 4.05 oz. for 5 gallons @ 60°F
