Ahem, step mash: 142F for 16 minutes 152.5 for 60 minutes. VERY full mash-tun (had to smooth the surface to allow the lid to fit) Very thick mash. Fly sparge. Later gyle yielded 4 gal of 4.5P wort - used for top-up. |
